Equipment

  • 1 non-stick skillet or frying pan

Ingredients
  

Zucchini fritters

  • 2 zucchinis
  • 2 eggs
  • 2 tbsp all purpose flour
  • ¼ cup fresh parsley (chopped)
  • ¼ cup fresh cilantro (chopped)
  • salt and pepper
  • olive oil (for frying)

Additional ingredients

  • 8 slices Swiss cheese
  • 4 slices ham

Instructions
 

Prepare the Zucchini Fritters:

  • Prepare the Zucchini: grate the zucchini using a box grater. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10-15 minutes. Squeeze out excess moisture using a clean kitchen towel.
  • Mix the Batter: in a large mixing bowl, combine the grated and drained zucchini with flour, chopped parsley, chopped cilantro, salt-pepper, and beaten eggs. Mix until well combined.
  • Form the Fritters: heat a skillet over medium heat and add enough olive oil to coat the bottom of the pan. Using a spoon or your hands, form small patties with the zucchini mixture and place them in the hot skillet.
  • Fry the Fritters: cook the fritters for 2-3 minutes per side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.
  • Drain and Serve: place the cooked fritters on a paper towel-lined plate to absorb any excess oil

Assemble and cook the Zucchini Fritter Croque Monsieur:

  • Preheat the oven to 356° F (180° C).
  • Take a fritter, place a slice of cheese on it, then a slice of ham and another slice of cheese. Then add a fritter on top. Repeat with the remaining fritters.
  • Cook on the preheated oven for 10 minutes (or until the cheese start to melt).

Notes

  • For a complete meal, serve with a side salad or fresh greens.
  • You can use different cheese: mozzarella, american, cheddar...
