  • 2 tbsp olive oil
  • 1 onion
  • 3 carrots
  • stalk celery
  • 2 medium potatoes
  • 4 leeks
  • cups chicken broth
  • salt and pepper
  • parsley


  • Peel the onions, carrots, celery and potatoes then slice them quite roughly.
  • Wash the leeks and cut them into circles, just slice the white and light green part crosswise.
  • Heat oil in a large pot over medium heat. Add onion, cook for 5 minutes, until lightly browned.
  • Add carrots, celery, leeks and potatoes. Cook for 5 minutes.
  • Add Chicken broth. Place lid and simmer for about 20.
  • Add a touch of water if you want to adjust soup consistency. Season to taste with salt and pepper.
  • Blend the soup.
    Serve the soup and sprinkle some parsley on it.


Spice it by sprinkling some red chili flakes on it.
Variations: add or replace by any seasonal vegetable you like (zucchinis, kale...).
