  • 1 baking dish


  • 4 tomatoes (thinly sliced)
  • 2 zucchinis (thinly sliced)
  • 2 eggplants (thinly sliced)
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 tbsp thym (fresh leaves)
  • 1 tbsp rosemary (chopped)
  • 2 tbsp olive oil
  • salt and pepper


  • Preheat the Oven: preheat your oven to 375°F (190°C).
  • Prepare the Vegetables: thinly slice the tomatoes, zucchini, eggplant, and onion. Aim for uniform slices to ensure even cooking.
  • Layer the Vegetables: in a circular or rectangular baking dish, arrange the sliced vegetables in an alternating pattern, creating rows or circles. Overlap the slices slightly for a visually appealing effect.
  • Season with Herbs: sprinkle minced garlic, fresh thyme leaves, and chopped rosemary over the layered vegetables. Drizzle olive oil generously over the top. Season with salt and pepper to taste.
  • Bake: cover the baking dish with aluminum foil and bake in the preheated oven for approximately 40-45 minutes, or until the vegetables are tender.
  • Uncover and Brown the Top: remove the foil and continue baking for an additional 10-15 minutes or until the top is golden brown and the edges of the vegetables are slightly caramelized.
  • Serve Warm: allow the Vegetable Tian to rest for a few minutes before serving. Serve warm as a delightful side dish or a light main course.
