Tuna Tartar

  • 2 bowls
  • 2 food rings or ramekins


Tuna layer

  • 2 tuna steaks
  • 2 tbsp sesame oil
  • 1 tbsp soy sauve
  • 1 tbsp ground ginger or fresh chopped ginger
  • 2 tbsp lime
  • cup fresh cilantro
  • 1 tbsp toasted black or white sesame seed or mix of both
  • salt and pepper

Avocado layer

  • 2 avocados
  • 2 tbsp lime
  • salt and pepper
  • ¼ tbsp red pepper flakes


Tuna layer

  • In a bowl, combine the sesame oil and soy sauce, chopped ginger, lime juice and chopped cilantro and then toasted sesame seeds.
  • Cut the tuna into small cubes and add to the bowl.
  • Season with salt and pepper and stir. Set aside in the refrigerator.

Avocado layer

  • Put the flesh of the avocados in a bowl and mash it. Add the lime and if you want a spicy touch, add some red pepper flakes. Add salt and pepper and mix.

Making the plate

  • With a food ring : Arrange a layer of avocado halfway up and a layer of tuna on top. Unmold and serve with a little microgreens.
  • With a ramekin: Arrange a layer of tuna first, then avocado. Flip the ramekin onto the plate and gently unmold and serve with a little microgreens.


Suggestion: serve with black caviar and mini toasts.
