  • 1 small bowl
  • 1 toaster


  • 2 slices rustic italian bread or ciabatta
  • 2 tomatoes
  • 1 tsp basil pesto
  • 1 tsp fresh basil
  • salt and pepper
  • ½ tbsp olive oil
  • ¼ tbsp balsamic vinegar or balsamic pearls


  • Toast the slices of bread on a toaster and place them on a plate.
  • Wash and dice the tomatoes. You can remove the seeds.
  • Place the diced tomatoes in a bowl. Add the olive oil, balsamic, basil, salt and pepper. Mix everything.
  • Spread the pesto on each toast and arrange the tomatoes.
  • You can add a few basil leaves on top of the toast.


Variations: add mozzarella and or black olives to the tomatoes.
