  • 1 large pot
  • 1 blender (or immersion blender)


  • 2 tbsp olive oil
  • 1 pumpkin (medium-sized- peeled, seeded, and diced)
  • 1 onion (finely chopped)
  • 2 cloves garlic
  • 1 tsp red chili pepper flakes (adjust until you achieve the desired level of spiciness)
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp ground cayenne pepper (optional, for extra heat
  • 4 cups vegetable broth
  • 1 cup coconut milk

  • Sauté Aromatics: in a large pot, heat olive oil over medium heat. Sauté the chopped onion until translucent. Add minced garlic, chili peppers flakes, ground cumin, ground coriander, and cayenne pepper. Cook for a couple of minutes until fragrant.
