Ingredients
  

  • 1 cucumber (large - or 2 small cucumbers)- diced
  • 3 tomatoes (large)- diced
  • 1 red onion (small)- finely chopped
  • 4 tbsp parsley (fresh -finely chopped)
  • 3 tbsp mint (fresh -finely chopped)
  • 1 juice lemon
  • 2 tbsp extra virgin olive oil
  • 1 tsp sumac (optional)
  • Salt and pepper (to taste)

Instructions
 

  • In a large mixing bowl, combine the diced cucumbers, tomatoes, chopped red onion, parsley and mint.
  • Drizzle the lemon juice, sumac (optional) and olive oil over the salad ingredients.
  • Season with salt and pepper to taste.
  • Gently toss the salad until all the ingredients are evenly coated with the dressing.
  • Transfer the Shirazi Salad to a serving dish.
  • Serve immediately as a refreshing side dish or accompaniment to grilled meats, rice dishes, or kebabs.

Notes

  • For best results, use ripe, juicy tomatoes and crisp cucumbers to enhance the freshness of the salad.
  • Adjust the amount of lemon juice and olive oil according to your taste preferences.
  • Leftover salad can be stored in an airtight container in the refrigerator for up to 2 days.
