Salmon Tartar

Salmon Tartar

Salmon tartare is an elegant and refreshing starter, perfect to start a festive meal or for a light dinner on hot summer days. This raw dish, originating from French cuisine but influenced by culinary techniques from around the world, highlights the freshness and quality of salmon, finely chopped and often seasoned with lemon juice, olive oil, chives, and small cubes of cucumber or avocado for a touch of crunch.

  • 2 mixing bowls
  • 2 round food rings or ramekins
  • juicer


Layer of salmon

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp ginger (ground or fresh chopped ginger)
  • 4 tbsp lemon juice
  • 3 tbsp chives (fresh)
  • 2 tbsp red onion (chopped)
  • salt and pepper

Layer of avocado

  • 2 avocados
  • 2 tbsp lime
  • salt and pepper
  • ¼ tsp red pepper flakes


Salmon layer

  • Cut the salmon into small cubes
  • In a mixing bowl, combine the olive oil and soy sauce, chopped or ground ginger, lemon juice, chopped chives and red onions.
  • Season with salt and pepper and mix. Set aside in the refrigerator.

Avocado layer

  • Put the flesh of the avocados in a bowl and mash it. Add the lime and if you want a spicy touch, add some red pepper flakes. Add salt and pepper and mix.

Making the plate

  • With a food ring : Arrange a layer of avocado halfway up and a layer of salmon on top. Unmold and garnish with a few sprigs of chives.
  • With a ramekin: Arrange a layer of salmon first, then avocado. Flip the ramekin onto the plate and gently unmold. Garnish with a few sprigs of chives.
