Ingredients
  

For the salmon

  • 1 lb fresh sushi-grade salmon (cubed)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp honey (or maple syrup)
  • 1 tsp ginger (grated)
  • 1 clove garlic (minced)
  • 1 tbsp sesame seed

For the quinoa

  • 1 cup quinoa

For the toppings

  • 2 avocados (sliced)
  • 2 zucchinis (sliced)
  • 2 cups carrots (shredded)
  • 2 cups red cabbage (shredded)
  • 4 radishes (sliced)
  • 1 cup edamame

For the lemon ginger sauce

  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 lemon
  • 2 tsp ginger (grated or or powder ground ginger)
  • 1 clove garlic
  • salt and pepper

Instructions
 

  • Prepare the Salmon: in a bowl, combine soy sauce, sesame oil, honey, grated ginger, and minced garlic. Add the cubed salmon and marinate for at least 20 minutes (you can leave it to marinate overnight - don't forget to cover it).
  • Cook Quinoa: cook quinoa according to package instructions. Once cooked, fluff with a fork.
  • Prepare the sesame ginger sauce: in a small bowl, mix soy sauce, olive oil, lemon, ginger, garlic, salt and pepper.
  • Assemble the Poke Bowl: in individual bowls, create a base with the seasoned quinoa.
  • Assemble the Poke Bowl: in individual bowls, layer the quinoa as the base. Place the marinated salmon on top of the quinoa. Arrange the various toppings artistically on top, around the salmon.. Drizzle the lemon ginger sauce and sprinkle with sesame seeds.

Notes

  • Customize your poke bowl with additional toppings like mango or cucumber.
  • Feel free to replace quinoa with rice.
  • Adjust the level of sweetness or acidity in the salmon marinade to suit your taste.
