  • 4 eggs
  • ½ cup sugar
  • 0.8 cup all purpose flour
  • 1 tsp baking powder
  • lemon zest
  • 1 jar raspberry jam


  • Preheat the oven to 465°F.
  • Separate the egg yolks from the whites.
  • Beat egg whites until stiff.
  • In another large bowl, beat the yolks with the sugar until they turn white.
  • Add the sifted flour and baking powder. Add lemon zest.
  • Then gently incorporate the egg whites.
  • Spread the batter onto a buttered baking sheet or covered with parchment paper.
  • Bake for 7 to 8 minutes.
  • Unmold immediately on a damp cloth, sprinkled with fine sugar or a sheet of parchment (don't wait for this step, do it right out of the oven).
  • You can now roll up the cake inside the parchment sheet so that it takes the shape. Wait at least 15 minutes. Then garnish it with the jam of your choice and roll it again.


Garnish the cake with jam of your choice, chocolate, nutella, mascarpone cream, fresh fruit, whipped cream... Let your imagination run wild.
Sprinkle with icing sugar.
