  • 1 lb chicken breasts (450 g) boneless, skinless - cut into bite-sized pieces
  • 1 tbsp curry powder
  • 1 tbsp cooking oil (such as vegetable or coconut oil)
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (thinly sliced)
  • 1 cup pineapple chunks (fresh or canned)
  • ¼ cup chicken broth (250 ml or water)
  • salt and pepper (to taste)
  • cilantro (Fresh or parsley -for garnish -optional)


  • Cut the chicken into bite-sized pieces. In a mixing bowl, toss the chicken pieces with the curry powder until evenly coated. Set aside.
  • Heat the cooking oil in a large skillet or frying pan over medium heat. Add the sliced onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic and sliced red bell pepper to the skillet, and cook for an additional 2-3 minutes, or until fragrant.
  • Increase the heat to medium-high and add the curry-coated chicken pieces to the skillet. Cook, stirring occasionally, until the chicken is browned on all sides, about 5-6 minutes.
  • Once the chicken is cooked through, add the pineapple chunks and chicken broth (or water) to the skillet. Stir to combine and allow the mixture to simmer for 2-3 minutes, allowing the flavors to meld together.
