  • 4 eggs
  • brown sugar
  • butter
  • vanilla extract
  • all purpose flour or gluten free flour
  • baking powder


  • Preheat the oven to 355° F.
  • Mix the yolks with the sugar until the mixture turns white.
  • Add the melted butter, the vanilla then the flour with the baking powder.
  • Beat the egg whites with the mixer until stiff and gently add them to the mixture.
  • Peel and core the pears, cut them into small pieces.
  • Pour the preparation into a buttered and floured round mold, then pour the pears on top, add 2 tbsp of sugar and bake for a good half hour.
  • Let the cake rest for a few minutes before unmolding it.


Sprinkle with icing sugar when serving.
