  • 1 ½ cups oat flour (170 g)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 bananas (mashed)
  • 3 eggs
  • ¼ cup coconut oil (50 g)
  • ½ cup maple syrup (100 g)
  • 1 tsp vanilla extract

  • Preheat your oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan with parchment paper.
  • In a mixing bowl, combine dry ingredients: the oat flour, baking soda and baking powder. Stir until well combined.
  • In a separate bowl, mash the ripe bananas with a fork until smooth. Add the eggs, the maple syrup, melted coconut oil, and vanilla extract, and mix until evenly combined.
  • Pour the wet ingredients into the dry ingredients, and gently fold until just combined. Be careful not to overmix.
  • If desired, fold in any optional add-ins such as chopped nuts, chocolate chips, or dried fruit.
  • Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the banana bread from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.


  • Make sure to use certified gluten-free oat flour if you need the bread to be entirely gluten-free.
  • For added flavor, consider mixing in chopped nuts like walnuts or pecans, chocolate chips, or dried fruit such as raisins or cranberries.
