  • 2 mixing bowls
  • 1 whisk
  • 1 Rubber spatula
  • 1 mixer
  • 1 pancake pan


  • 2 eggs
  • ¾ cup milk (200 ml - or plant-based milk for dairy-free option)
  • 1 cup all-purpose flour (160 g)
  • 1 packet active dry yeast (2 ½ tsp)
  • ½ tsp salt
  • butter (or cooking oil for dairy-free option)


  • Separate egg whites from yolks.
  • In a medium mixing bowl, whisk the yolks and milk (wam milk).
  • In a separate bowl, whisk together the flour, active dry yeast and salt. Dig out a well and pour in the previous mixture.
  • Mix until you obtain a smooth paste. Cover and leave to rest for 2 hours.
  • After two hours of rest, beat the egg whites in a medium mixing bowl. Turn on the mixer to high speed and beat until stiff peaks form.
  • Add the egg whites to the previous mixture, lifting the mixture carefully with a rubber spatula.
  • Let the blini dough rest for another 15 minutes.
  • Heat a small amount of butter in a pan (medium heat, not too high) and pour in a little blini dough (1 teaspoon). When the dough is dry, turn the blinis over and continue cooking on the other side.
  • Optional: as they cook, keep the blinis warm on a plate placed over a pan of hot water, and covered with aluminum foil.


Toppings of your choice: smoked salmon, crème fraîche, caviar, fresh herbs, or lemon wedges.
