Mini Apple Tartes Tatin

Tarte Tatin, named after the Tatin sisters who created it in the 19th century at their hotel in Lamotte-Beuvron, France, has since become a beloved French pastry classic. Originally a serendipitous creation resulting from a kitchen mishap, this upside-down apple tart has evolved into a symbol of French culinary tradition, celebrated for its simplicity and exquisite flavors.

  • 4 Individual tart pans or ramekins for individual tartes tatin
  • 1 mini muffin pan for about 10-12 mini tartes tatin
  • 1 Rolling Pin
  • 1 Knife or pastry cutter
  • 1 saucepan


  • 1 sheet puff pastry
  • 4 apples (such as Granny Smith or Braeburn)
  • ½ cup sugar (100g)
  • 1 tbsp lemon juice
  • 4 tbsp butter (55g)
  • ½ tsp cinnamon (optional)


  • Preheat your oven to 375°F (190°C).
  • Peel and core the apples, then dice them for mini tarts or cut them into wedges for individual tarts.
  • In a saucepan, melt butter over medium heat. Add sugar and few drops of lemon and stir until dissolved and caramelized.
  • Arrange the apple slices in the bottom of each tart pan or ramekin, overlapping slightly.
  • Pour the caramel mixture over the apples, ensuring they are evenly coated.
  • Roll out the puff pastry. Prick your pie dough with a fork beforehand (this is a very important step which will prevent the dough from swelling during cooking). Cut out circles slightly larger than the diameter of the tart pans.
  • Place the pastry circles over the apples, tucking in the edges.
  • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp.
  • Remove from the oven and let cool for a few minutes before carefully inverting onto serving plates.
  • Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream. Optional: sprinkle the tarts with cinnamon.
