Equipment

  • mini silicone muffin pan
  • bowl (or saucepan)

Ingredients
  

  • 2 eggs
  • sugar (80 g)
  • 1 tsp vanilla extract
  • butter (50 g)
  • all-purpose flour (100 g)
  • ½ tsp baking powder (½ packet)
  • 2 apples

Instructions
 

  • Preheat the oven to 180℃ (365℉).
  • In a mixing bowl, mix eggs and sugar.
  • Melt the butter in a bowl in the microwave or over medium heat in a saucepan.
  • Add the vanilla and melted butter to the egg and sugar mixture. Mix well.
  • Then add the flour and baking powder until you obtain a smooth and homogeneous mixture.
  • Peel and cut the apples into small pieces. Add them to the preparation.
  • Pour the batter into mini muffin molds (silicone or buttered molds) and bake for 15 minutes.
  • Unmold a few minutes after removing the cakes from the oven. Serve warm or cold.

Notes

  • Use a variety of apples for the best flavor and texture in your mini apple cakes. A combination of sweet and tart apples, such as Granny Smith and Honeycrisp, works well.
  • Be sure to dice the apples into small, uniform pieces to ensure even distribution throughout the cakes.
  • Don't overmix the batter to avoid developing too much gluten, which can result in dense cakes. Mix until just combined.
  • Feel free to customize the spices in the batter to suit your taste preferences. Add a pinch of cloves or ginger for a spicier kick, or swap cinnamon for cardamom for a unique flavor twist.
