Ingredients
  

  • 4 salmon fillets
  • 6 mandarins
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 2 tbsp fresh herbs (such as parsley, cilantro, or dill), finely chopped
  • 4 tbsp pistachios (chopped)
  • 2 tbsp olive oil
  • salt and pepper (to taste)

Instructions
 

  • Squeeze the juice from 4 clementines. Peel the other two and separate the segments. Set aside.
  • Toast the chopped pistachios in a separate dry skillet over medium heat until lightly golden and fragrant. Set aside.
  • Mix the apple cider vinegar and honey in a saucepan. Cook for 10 minutes over medium low heat to obtain a syrupy liquid.
  • Add the mandarin juice, salt and pepper and cook for another 5 minutes over medium heat to obtain a thicker sauce.
  • Heat the olive oil in a large skillet or frying pan over medium heat.
  • Season the salmon fillets with salt and pepper on both sides.
  • Once the skillet is hot, add the salmon fillets to the pan, skin-side down. Cook for 3-4 minutes, or until the skin is crisp and golden brown.
  • Carefully flip the salmon fillets using a spatula. Pour the mandarin glaze over the salmon fillets, making sure they are evenly coated. Add the mandarin segments.
  • Reduce the heat to medium-low and continue cooking the salmon for another 3-4 minutes, or until cooked to your desired level of doneness and the glaze has thickened slightly.
  • Once the salmon is cooked through, transfer it to serving plates. Drizzle any remaining glaze from the pan over the salmon.
  • Garnish the glazed salmon with the toasted pistachios and additional fresh herbs, if desired.
  • Serve the Mandarin Glazed Salmon immediately, accompanied by your favorite side dishes.
