  • 2 saucepans

  • 1 cup lentils (200 g -brown or green lentils or red lentils)
  • 2 carrots (sliced)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp cumin (ground)
  • 1 tsp coriander (ground)
  • ½ tsp paprika
  • salt and pepper (to taste)
  • 1 tbsp olive oil (for cooking)
  • cilantro (Fresh or fresh parsley -for garnish -optional)
  • 2 tbsp white vinegar
  • 4 eggs



  • In a saucepan, combine the rinsed lentils with enough water to cover them by about 2 inches. Bring to a boil, then reduce the heat to a simmer and cook for 20-25 minutes or until the lentils are tender. Drain any excess liquid and set aside.
  • While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the sliced onions and diced carrots, and sauté until caramelized and golden brown, about 15-20 minutes. Season with salt and pepper to taste.
  • Stir in the ground cumin, ground coriander, and paprika, and cook for an additional 1-2 minutes to toast the spices and enhance their flavors.
  • Add the cooked lentils to the skillet with the spiced vegetables. Season with salt and pepper to taste, and stir everything together until well combined. Cook for another 2-3 minutes to allow the flavors to meld together.

Poached Egg

  • While the lentils are heating through, poach the eggs: Fill a large saucepan with water and 2 tbsp of white vinegar and bring it to a gentle simmer. Crack each egg into a small bowl or ramekin.
  • Using a slotted spoon, create a gentle whirlpool in the simmering water and carefully slide each egg into the center of the whirlpool. Poach the eggs for 3-4 minutes, or until the whites are set but the yolks are still runny.
  • Using a slotted spoon, carefully remove the poached eggs from the water and drain them into a small bowl and repeat with the remaining eggs.

Assemble the Spiced Lentils and poached eggs

  • Remove the spiced lentils with carrots from the heat. To serve, divide the lentil mixture among serving plates or bowls. Top each portion with a poached egg and garnish with chopped parsley or cilantro, if desired.
  • Serve the Lentils with Onion, Carrots, and Poached Egg immediately, allowing the creamy yolks to melt with the savory lentils. Enjoy!
