Lemon Shrimp Linguine

  • 1 Deep skillet or pan (for cooking shrimp and assembling the dish)
  • 1 colander ( for draining pasta)
  • 1 Wooden spoon or spatula (for stirring)

Ingredients
  

  • 8 oz 8 oz pasta (linguine, fettuccine, or spaghetti) (225g)
  • 1 lb large shrimps (450g) (peeled and deveined)
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 lemon (zest and juice)
  • Salt and black pepper to taste
  • 4 tbsp Fresh parsley (chopped, for garnish)

Instructions
 

  • Prepare the Pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
  • Cook the Shrimp:
    In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Season with salt and black pepper. Remove the shrimp from the pan and set aside.
  • Prepare the Sauce:
    In the same pan, add the remaining 1 tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant.
  • Combine Pasta and Sauce:
    Add the cooked pasta to the pan with garlic. Toss to coat the pasta in the oil and garlic.
  • Add Lemon Zest and Juice:
    Add the lemon zest and lemon juice to the pasta. Toss again to coat evenly. Adjust the seasoning with salt, black pepper.
  • Add Shrimp and Garnish:
    Gently fold in the cooked shrimp, ensuring they are evenly distributed. If the pasta seems dry, add a bit of the reserved pasta cooking water to reach the desired consistency.
  • Serve:
    Transfer the Lemon Shrimp Pasta to serving plates. Garnish with chopped fresh parsley.
