  • 5 ½ tbsp coconut oil (75 g) -or extra virgin olive oil (melted)
  • ½ cup honey (168 g ) -8 tbsp (or maple syrup -155 g)
  • 2 eggs
  • 2 ripe bananas (225 g - 2 large bananas) -mashed
  • ¼ cup milk (56 g) -almond or soy or water
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 ¾ cups whole wheat flour (220 g)

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or line it with parchment paper.
  • Melt the coconut oil (microwave or in a saucepan). In a large mixing bowl, whisk together the melted coconut oil and honey or maple syrup until well combined.
  • Mash the bananas.
  • Add the eggs, mashed bananas, milk or water, baking soda, vanilla extract, and salt to the bowl. Mix until smooth and creamy.
  • Gradually add the whole wheat flour to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • If desired, fold in your choice of optional ingredients such as nuts, chocolate chips, raisins, or chopped dried fruit.
  • Pour the batter into the prepared loaf pan, spreading it out evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Remove the banana bread from the oven and allow it to cool in the pan for 10 minutes.
  • After 10 minutes, transfer the bread to a wire rack to cool completely before slicing and serving.
