  • 200 g hazelnuts (about 1 ½ cups)
  • 150 g sugar (about ¾ cup)
  • 60 ml water (¼ cup)


  • Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet lined with parchment paper and toast them for 10-15 minutes, or until they're golden and fragrant. Allow them to cool slightly, then rub them in a clean kitchen towel to remove as much skin as possible.
  • In a heavy-bottomed saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns a deep amber color. Do not stir.
  • Add the toasted hazelnuts to the caramel, ensuring they are fully coated. Pour the mixture back onto the parchment paper and let it cool completely.
  • Once cooled, break the caramelized hazelnuts into pieces and transfer them to a food processor. Blend until the mixture forms a smooth, oily paste. This may take several minutes.
  • Store the hazelnut praline paste in an airtight container at room temperature for up to a month or in the refrigerator for up to three months.


  • Be patient when blending the hazelnuts and sugar. It may take some time for the oils to release and the mixture to become smooth.
  • Adjust the sweetness by reducing the sugar if desired, but keep in mind that the caramelization is essential for the flavor profile.
