Fresh Spring Rolls with Peanut Sauce

Originating from Southeast Asia, these rolls combine simple, fresh ingredients to create a dish that's as pleasing to the eye as it is to the palate. Wrapped in delicate rice paper, the combination of crunchy vegetables, tender chicken, and soft vermicelli noodles, all dipped in a rich, savory peanut sauce, makes for a perfectly balanced bite.

For the Rolls

  • 7 oz chicken breasts (cooked and thinly sliced -200 g)
  • 1 cucumber (julienned)
  • 1 avocado (sliced)
  • 1 cup red cabbage (thinly sliced -100 g)
  • 2 carrots (julienned)
  • ½ cup bean sprouts (100 g)
  • ¾ cup rice vermicelli noodles (cooked according to package instructions -50 g)
  • 8-10 rice paper wrappers
  • lettuce
  • mint (Fresh- Optional)

Peanut Butter Sauce

  • 4 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 clove garlic (minced)
  • 1 tsp honey
  • water (to thin)
  • chili flakes (to taste)


Prepare the Ingredients:

  • Cook the sliced chicken and noodles as per instructions.
  • Julienne the cucumber and carrot, slice the avocado, and thinly slice the cabbage.

Make the Peanut Sauce:

  • In a bowl, combine peanut butter, soy sauce, minced garlic, honey, and a bit of water to achieve the desired consistency.
  • Adjust flavors with chili flakes or soy sauce as desired.

Assemble the Rolls:

  • Soak a rice paper wrapper in warm water until soft.
  • Lay it on a clean surface and place a small amount of each filling ingredient (start with the lettuce) on the wrapper, leaving enough space at the edges to roll.
  • Fold in the sides and roll tightly. Repeat with the remaining ingredients.
  • Serve: Cut the rolls in half, if desired, and serve with the peanut sauce for dipping.


  • Don’t overfill the rolls, as this can make them difficult to roll and more likely to tear.
  • The rolls are best enjoyed fresh but can be stored in an airtight container with a damp paper towel over and under them to keep them from drying out.
  • Feel free to customize the filling according to your preferences or dietary needs (Shrimps, only vegetables...).
