  • medium saucepan

  • 7 oz chocolate (dark) (200 g) -more than 50 % cocoa
  • 7 tbsp butter (100 g)
  • ½ cup sugar (125 g)
  • 3 tbsp cornstarch (30 g)
  • 2 tbsp almond flour (20 g)
  • 3 eggs


  • Preheat your oven to 356°F (180°C). Grease and flour four ramekins or muffin tin cups.
  • Melt dark chocolate and butter together using a double boiler (how to properly double boiler?), stirring occasionally. Once melted and smooth, remove from heat and let cool slightly.
  • Add the granulated sugar. Whisk.
  • Then, still off the heat, add the eggs to the cooled chocolate mixture, one at a time, whisking well after each addition.
  • Gradually add the dry ingredients (cornstarch and almond flour) to the chocolate mixture, whisking until smooth and well combined.
  • Divide the batter evenly among the prepared ramekins or muffin tin cups.
  • Bake in the preheated oven for 15 minutes, or until the edges are set but the centers are still slightly jiggly. If you use bigger ramekins (for 4 servings instead of 6), bake for 18 minutes.
  • Remove from the oven and let cool for a few minutes before serving.
  • Serve the Moelleux au Chocolat warm, either in the ramekins or turned out onto serving plates. Dust with powdered sugar or top with a scoop of vanilla ice cream for an extra indulgent touch.


  • Be careful not to overbake the Moelleux au Chocolat, if you want the center to remain soft and gooey.
  • You can prepare the batter ahead of time and refrigerate it until ready to bake. Just be sure to bring it to room temperature before baking.
  • For an added element of surprise, you can also insert a piece of chocolate or a dollop of Nutella or peanut butter into the center of each cake before baking for a molten chocolate filling.
