Here is a low carb variation of the traditional pizza where the eggplant slices replace the pizza dough.

  • 1 baking sheet


  • 2 eggplants
  • 2 tbsp olive oil
  • 1 cup tomato sauce (or marinara sauce) (250 ml)
  • cups mozzarella cheese (200 g - grated or shredded)
  • 4 tbsp black olives (sliced)
  • 4 tbsp basil (fresh)
  • dried basil (or dried oregano - optional)
  • salt and pepper


  • Preheat your oven to 400°F.
  • Wash the eggplants and slice them into ½ inch rounds.
  • Brush both sides of each eggplant slice with olive oil and season with salt and pepper.
  • Place eggplant slices on a baking sheet lined with parchment paper.
  • Roast the eggplant slices in the preheated oven for 15-20 minutes or until they are tender and lightly golden.
  • Remove the eggplants from the oven and spread a spoonful of tomato sauce on each slice. Optional: sprinkle a little bit of dried basil or oregano on each slice.
  • Sprinkle shredded mozzarella cheese over the sauce, ensuring even coverage.
  • Top the pizza with black olives.
  • Return the eggplant pizzas to the oven and bake for an additional 10-12 minutes or until the cheese is melted and bubbly.
  • Optional: For a touch of heat, sprinkle crushed red pepper flakes over the pizzas before serving.
  • Top with fresh basil leaves. Serve warm and enjoy your Eggplant Pizza!
