  • 1 baking sheet


  • 2 eggplants
  • 2 tbsp olive oil
  • 1 cup tomato sauce (or marinara sauce)
  • cups shredded mozzarella cheese
  • ¼ cup sliced black olives
  • ¼ cup fresh basil
  • salt and pepper
  • crushed red pepper flakes (optional, for a hint of spice)


  • Preheat your oven to 400°F.
  • Wash the eggplants and slice them into ½ inch rounds.
  • Brush both sides of each eggplant slice with olive oil and season with salt and pepper.
  • Place eggplant slices on a baking sheet lined with parchment paper.
  • Roast the eggplant slices in the preheated oven for 15-20 minutes or until they are tender and lightly golden.
  • Remove the eggplant from the oven and spread a spoonful of tomato sauce on each slice.
  • Sprinkle shredded mozzarella cheese over the sauce, ensuring even coverage.
  • Top the pizza with cherry tomatoes, black olives, and a sprinkle of fresh basil.
  • Return the eggplant pizzas to the oven and bake for an additional 10-12 minutes or until the cheese is melted and bubbly.
  • Optional: For a touch of heat, sprinkle crushed red pepper flakes over the pizzas before serving.
