Cauliflower Rice Chicken Biryani

Low carb version of the classic Indian recipe with cauliflower rice, tender chicken, and a medley of spices come together to create a wholesome, satisfying dish that will transport you to the vibrant streets of India.

  • 1 skillet or large pan

Ingredients
  

For the marinade

  • 1 lb chicken (cubed)
  • 1 tsp ginger (grated)
  • 1 tsp garlic (minced)
  • ½ tsp turmeric (ground)
  • ½ tsp garam masala
  • ¼ tsp chili powder
  • 2 tbsp lemon juice
  • 1 tsp salt

For the cauliflower rice

  • 1 tbsp ghee, clarified butter (or olive oil)
  • 4 cups frozen cauliflower rice
  • 1 tsp cumin seeds

For the biryani

  • 1 tbsp ghee, clarified butter (or olive oil)
  • 1 onion (diced)
  • 1 tsp cumin powder
  • ½ cup cilantro (chopped)
  • 1 lemon (for serving)
  • ½ tsp garam masala
  • ½ tsp turmeric (ground)

Instructions
 

  • Marinate the Chicken: in a bowl, combine chicken pieces with ginger, garlic, turmeric powder, red chili powder, garam masala, lemon juice and salt. Marinate for at least 1 hour or overnight for enhanced flavor.
  • Sauté Onions: in a large, deep pan, heat ghee or oil. Sauté thinly sliced onions until golden brown and crisp.
  • Layering the Biryani and cauliflower rice: in the same pan, layer the marinated chicken at the bottom. Sprinkle the remaining ½ tsp of biryani masala and ½ tsp of cumin powder and ½ tsp of turmeric. Spread the cauliflower rice and cumin seeds over the chicken and spice layer.
  • Slow Cooking:
    Cover the pan and cook, stirring until tender, about 10 minutes (low heat).
  • Serve: garnish with cilantro and serve with lemon wedges.

Notes

  • You can substitute chicken with your preferred protein or make it vegetarian with added vegetables.
