  • large skillet (or wok)

  • 2 tbsp vegetable oil
  • 3 eggs
  • 1 head cauliflower (medium-sized head or frozen cauliflower rice -2 bags)
  • 1 onion (chopped)
  • 1 lb chicken breasts (450 g - diced)
  • 3 cloves garlic
  • 3 green onions
  • 1 tbsp ginger (grated)
  • cup carrots (30 g - diced)
  • ¼ cup green peas (50 g - frozen)
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil


  • Heat 1 tablespoon of oil over medium heat in a large skillet or wok. Pour beaten eggs into the large skillet and scramble until cooked through. Set aside.
  • Prepare the veggies: process the cauliflower in a food processor until it resembles rice-sized pieces. Set aside. Peel onion, carrots, garlic, ginger. Finely chop the onion. Dice the carrots, mince ginger and garlic.
  • Dice the chicken. Set aside.
  • Cut the green onions and separate the whites from the greens.
  • Still in the wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add onion and the white part of green onions. Cook for 5 minutes.
    Add then the diced carrots and stir-fry until they begin to soften.
  • In the same skillet, add another tablespoon of oil if needed.
    Add diced chicken, season with salt and pepper and minced garlic with grated ginger. Cook until browned.
  • Incorporate the cauliflower rice, stirring well and add soy sauce and sesame oil. Cook for another 5 minutes.
  • Mix the scrambled eggs with the cauliflower mixture, ensuring everything is well combined.
    Stir in sliced green onions.
  • Serve your Chicken Cauliflower Fried Rice hot, and relish the delicious flavors of this low-carb alternative.
