Cat's Tongue Cookies (Langues de Chat)

Langues de chat, French for "cat's tongues," are delicate, light cookies with a soft interior and a slightly crisp exterior. Their name comes from their long, thin shape, reminiscent of a cat's tongue. These cookies are a classic in French baking, celebrated for their simplicity and elegance.   • 150 g all-purpose flour
  • 125 g sugar
  • 125 g butter
  • 3 egg whites


  • Preheat the oven to 356°F. Line a baking sheet with parchment paper.
  • Mix the softened butter vigorously with a spatula.
  • Add the sugar and continue mixing with the spatula. You can carried out this step in the pastry robot with the flat beater.
  • Add the egg whites one by one, mixing well between each addition.
  • Add the sifted flour. You should obtain a non-liquid but homogeneous paste (a little firm but flexible).
  • Fill a piping bag with a round tip (or cut a small hole in your piping bag).
  • Form sticks on the baking sheet, lined with baking paper, 2 inch long, arranging them in a staggered pattern.
  • Cook in a hot oven for between 8 and 12 minutes (depending on your oven), they are cooked when the edges are a nice brown color and the middle is still white.
  • Using a flat spatula, slide the cat's tongues onto a cooling rack and leave to cool before reserving in an airtight box for up to 5 days.
