Ingredients
  

  • 1 ripe cantaloupe (peeled, seeded, and cubed)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (thinly sliced)
  • 2 chicken breast (cooked, shredded or diced)
  • 1 burrata cheese ball
  • fresh basil leaves (for garnish)
  • 1 tbsp virgin olive oil
  • balsamic glaze (for drizzling)
  • salt and pepper

Instructions
 

  • Prepare Ingredients: peel, remove the seeds and cube the ripe cantaloupe (or make cantaloupe balls with a melon baller, halve the cherry tomatoes, thinly slice the cucumber, and cook and shred the chicken breast.
  • Assemble Salad: in a large serving bowl, combine the cantaloupe cubes, halved cherry tomatoes, sliced cucumber, and shredded chicken.
  • Add Burrata: gently tear the burrata cheese into pieces and scatter them over the salad.
  • Drizzle and Season: drizzle extra virgin olive oil and balsamic glaze over the salad. Season with salt and black pepper to taste.
  • Garnish: garnish the salad with fresh basil leaves for a burst of aromatic flavor.
