Ingredients
  

  • 1 cup buckwheat flour (120 g-4.2 oz)
  • ½ cup unsalted butter (softened - 113g-4oz)
  • ½ cup brown sugar (100 g-3.5oz)
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ chopped nuts Optional- walnut, almond (60g-2.1 oz)

Instructions
 

  • Preheat Oven: preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream Butter and Sugar: in a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add Egg and Vanilla: add the egg and vanilla extract to the butter-sugar mixture. Beat until well combined.
  • Combine Dry Ingredients: in a separate bowl, whisk together the buckwheat flour, baking powder, and salt.
  • Mix Wet and Dry Ingredients: gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms. Fold in chopped nuts if using.
  • Shape Cookies: using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
  • Bake to Perfection: bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Keep in mind that buckwheat cookies may appear darker than traditional cookies.
  • Cool and Enjoy: allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy the nutty goodness!

Notes
