Broccoli Au Gratin

Ingredients
  

  • 2 lbs broccoli (1 kg)
  • 2 tbsp butter (30 g)
  • 2 tbsp all-purpose flour  (30 g)
  • 1 ½  cups milk  (375 ml)
  • 1 pinch nutmeg  (ground)
  • salt and pepper  (to taste)
  • 2 cups gruyère cheese  (200 g or Swiss cheese) shredded

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease an oven-safe baking dish with butter or cooking spray.
  • Bring a large pot of salted water to a boil (or cook the broccoli in a steamer). Cut the broccoli into florets. Add the broccoli florets to the boiling water and cook for 5-7 minutes, or until they are just tender. Drain the broccoli and transfer it to the prepared baking dish.
  • In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook the roux for 1-2 minutes, stirring constantly, until it becomes golden brown.
  • Gradually whisk in the milk, stirring constantly to prevent lumps from forming. Continue cooking the sauce until it thickens and coats the back of a spoon, about 5 minutes.
  • Remove the saucepan from the heat and stir in half of the shredded Gruyère or Swiss cheese until it is fully melted and incorporated into the sauce. Season with salt and pepper to taste and add a pinch of grounded nutmeg.
  • Pour the cheese sauce evenly over the broccoli in the baking dish, ensuring that all the florets are coated. Sprinkle the remaining cheese.
  • Bake the Broccoli au Gratin in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbling.
  • Remove the gratin from the oven and let it cool for a few minutes before serving.

Notes

  • For added flavor, you can incorporate minced garlic or chopped herbs into the cheese sauce.
  • Feel free to customize the cheese blend by using your favorite varieties, such as cheddar, mozzarella, Emmental, or Fontina.
  • Leftover Cauliflower au Gratin can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • Serve this dish as a side with roasted meats, grilled fish, or as a main course alongside a fresh green salad for a complete meal.
