  • 1 non-stick frying pan (or skillet)


  • olive oil (or butter)
  • 2 eggs
  • 1 bell pepper (any color)
  • salt and pepper ( to taste)
  • optional toppings: shredded cheese, chopped herbs, cooked bacon or sausage


  • Wash the bell pepper thoroughly under running water.
  • Slice the bell pepper into rings of your desired thickness (about 1 inch -2.5 cm thick for making Bell Pepper Eggs). Discard the top and bottom pieces of the pepper, or save them for other recipes. For 1 serving, you need 2 rings.
  • Heat a non-stick pan over medium heat. Lightly grease the pan with oil or butter.
  • Place the bell pepper rings in the pan, ensuring they lie flat and are spaced apart.
  • Crack one egg into each bell pepper ring, being careful not to break the yolk (you can crack the eggs first in a small bowl and then pour them into each bell pepper ring). Season with salt and pepper to taste.
  • If desired, sprinkle shredded cheese, chopped herbs, or cooked bacon/sausage on top of each egg.
  • Cover the frying pan with a lid and let the eggs cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
  • Once the eggs are cooked, carefully remove them from the pan using a spatula and transfer to serving plates.
  • Garnish with additional herbs or toppings if desired, and serve immediately.
