  • 2 mixing bowls
  • 1 electric mixer (or hand whisk)
  • 1 baking sheet
  • 1 parchment sheet
  • 1 cookie spoon or scoop


  • 2 ripe bananas (mashed)
  • ½ cup peanut butter (100 g)
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • ½ cup brown sugar (100 g)
  • ¾ cup all purpose flour (90 g)
  • ½ cup chocolate chips (80 g - adjust according to your taste)
  • 2 tbsp chopped nuts (optional)


  • Preheat the Oven: preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Prepare Wet Ingredients: in a large mixing bowl, mash the bananas, and combine peanut butter, brown sugar and vanilla extract. Mix until well combined.
  • Combine Dry Ingredients: in a separate bowl, whisk together the flour, baking powder.
  • Combine Wet and Dry Ingredients: gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms. If desired, fold in chocolate chips or nuts.
  • Chill the Dough (Optional): for a firmer texture, you can refrigerate the cookie dough for about 30 minutes.
  • Shape the Cookies: scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving some space between each cookie.
  • Bake: bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The cookies will be soft in the center but will firm up as they cool.
  • Cool and Enjoy: allow the cookies to cool on the baking sheet for a few minutes before placing them on a rack.


  • If you prefer a firmer texture, refrigerate the cookie dough for 30 minutes before baking.
