  • 1 mixing bowl
  • 1 Pan
  • 1 whisk


  • 1 large ripe banana (or 2 smalls)
  • 2 eggs
  • 3 tbsp all-purpose flour (or 4 tbsp gluten free flour)
  • ½ tsp baking powder
  • 2 tbsp milk (dairy free milk for dairy free pancakes)


  • In a small bowl, mash the ripe banana and add eggs. Mix well.
  • Add the all-purpose flour, sugar, baking powder and milk (1 or 2 tbsp depending on the texture, not too runny not to thick). Stir until just combined. It's okay if there are a few lumps.
  • Heat a pancake pan or non-stick frying pan over medium heat. Spray with a nonstick cooking spray.
  • Scoop 2 or 3 tbsp portions of batter onto the griddle for each pancake.
  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Stack the pancakes on a plate and top with sliced bananas, maple syrup, or a sprinkle of cinnamon.


Storage: Keep in the fridge for up to 3 days or freeze.
