Avocado Toast with Poached Egg

Avocado and poached egg toast is a modern and delicious dish, perfect for a nutritious brunch or light lunch. This blend of textures and flavors, combining the creamy sweetness of avocado and the rich velvety texture of poached egg, creates a perfect balance on a slice of crusty bread.
The toast is often topped with condiments like sea salt, freshly ground black pepper, and sometimes a drizzle of hot sauce or some fresh herbs to add an extra dimension of flavor.

  • 1 toaster
  • 1 small mixing bowl
  • 1 medium saucepan
  • 1 small cup
  • 1 medium bowl



  • 2 slices rustic bread

Mashed Avocado

  • 2 avocados
  • ½ lime
  • salt and pepper
  • 1 pinch paprika
  • 2 tbsp chives
  • ¼ tsp red pepper flakes

Poached eggs

  • 2 eggs
  • 1 tbsp white vinegar
  • ice

Making the toasts

  • 2 radish
  • microgreens



  • Toast the bread in the toaster or in the oven (broil mode). Put aside.

Mashed avocado

  • Take the flesh of the avocados and mash it in a small mixing bowl. Add the lemon, salt, pepper, chives, paprika and red pepper flakes. Mix and keep the avocado mashed in the fridge.

Poached eggs - option 1 (boiled water)

  • Bring a medium sauce pan filled with water to a boil, then add vinegar.
  • Meanwhile, carefully crack the egg into a small cup.
  • Lower heat until water is simmering. Gently lower the eggs into the simmering water. Using a slotted spoon, bring the filaments of white around the yolk throughout the cooking process so that they clump together. Cook for 3 minutes.
  • After 3 minutes, remove the egg with the slotted spoon and place it in a bowl of iced water.

Poached eggs - option 2 (microwave)

  • In a microwave-safe ramekin, put 4 tablespoons of water. Gently break the egg into the ramekin.
  • Microwave everything at maximum power for 45 seconds (or 50-55 seconds if your microwave does not go beyond 900W).
  • Remove the egg , by pouring the contents of the ramekin into the slotted spoon and place it in a bowl of iced water.

Making the toasts

  • Wash the radishes. Cut them into thin slices.
  • Arrange a toast on a plate. Spread the toast with the avocado mashed, dig a slight well in the middle to hold the egg securely. Arrange the poached egg, arrange the radish slices randomly and sprinkle the toast with microgreens of your choice.


Variation: add a slice of smoked salmon
