Ingredients
  

  • 2 ripe avocados
  • 1 cup frozen green peas, thawed
  • 2 tbsp lemon juice
  • salt and pepper
  • 4 slices whole-grain bread, toasted
  • 4 sliced radishes
  • Optional: Microgreens

Instructions
 

  • Toast the bread.
  • In a bowl, mash the ripe avocados with a fork until smooth.
  • In a separate bowl, lightly mash the thawed green peas (keep some to garnish the final toast), leaving some texture.
  • Mix the mashed green peas into the avocado mash
  • Add fresh lemon juice to the mixture, and season with salt and pepper. Stir until well combined.
  • Spread the avocado and green pea mixture evenly over the toasted whole-grain bread slices.
  • Top each toast with sliced radishes, arranging them for a colorful presentation. Add some green peas.
  • Garnish with microgreens or sprouts, if desired.
